Smash Burgers
Ingredients:
- 1lb ground beef 
- Hamburger buns of choice 
- 2 TBSP Duck Fat 
- 1 tsp "Flavor Dust" (Bonito flakes, Dried shitake, Kombu. Quantities are roughly 1:1:1. Pulverize to a dust in a spice grinder and store the rest in a spice container for future use. 
- A few glugs of Worcestershire sauce 
- One glug of fish sauce 
- Approximately 1 tsp of freshly ground black pepper. 
- Salt & pepper -- reserved for seasoning burger exterior 
Directions:
- Mix all ingredients except salt together with hands and make into 6 equal size balls. 
- Heat up a skillet or cast-iron pan. You are looking to get it hot enough to throw a little smoke off. 
- One at a time, smash the meatballs onto the pan with enough pressure to really flatten it out without breaking it apart. 
- Generously salt and pepper top of burger. 
- Fry burger 2-3 minutes, then flip. 
- Salt and pepper again to taste. 
- Cook till you can see the meat along perimeter of burger lifting from pan and looking crispy. 
- *If you're looking for something cheesy, place your choice of cheese on burger about 30 seconds before you want it done and cover pan/griddle with lid or something that can keep heat and steam in. It'll melt real quick!
