Winter Squash and Pork Stir-Fry

Ingredients
• 4 tablespoons peanut or neutral oil, like grapeseed or corn
• 1 pound pork shoulder, cut into thin bite-size pieces or shredded
• 1 pound peeled winter squash, julienned Butternut, or Kabocha
• 2 tablespoons minced ginger
• 1/4 cup chopped scallions
• 1 cup any stock
• 2 tablespoons soy sauce
• Minced scallions, chives or cilantro for garnish, optional

• 4 tablespoons butter, plus 2 tablespoons, plus 1 tablespoon

• 3/4 teaspoon salt
• 1/4 teaspoon ground white pepper
• 1/4 teaspoon Emeril's Red Hot Sauce
• 8 1/2 ounces grated Parmigiano-Reggiano, or other good-quality parmesan cheese (about 2 cups)
• 1 pound elbow macaroni
• 1/2 teaspoon minced garlic
